Lamb Shish Kabobs

Total Time to Prepare: 12-24 hours
Ingredients:
2 TBLSP Olive Oil
1/2 Cup Chicken Broth
1/4 Cup Orange Juice
1 Lemon, Juiced
1 tsp. chopped garlic
1/4 tsp. salt
1/2 tsp. rosemary
1/8 tsp. black pepper
2 lbs S&S Lamb Shish Kabobs
24 cherry tomatoes
24 mushrooms
24 small onions or any veggies that you enjoy!!!
Directions:
Combine oil, broth, orange juice, lemon juice, garlic, salt, rosemary, and pepper.
Marinate in refrigerator for 12-24 hours
Assemble the kabobs, onions, mushrooms, and tomatoes onto skewers.
Broil 3 minutes from heat for 15 minutes, turning every 5 minutes.


BBQ Beef Back Ribs

Total Time to Prepare: 4-5 hours total time
Ingredients:
For the Rub:
3/4 cup raw sugar
1/4 cup salt (or more depending on your taste)
1/4 cup paprika
2 TBLSP ground black pepper
1 TBLSP granulated garlic
1 TBLSP onion powder
1 TBLSP ground cumin
1 TBLSP chili powder
1 tsp dry mustard
1 tsp ground coriander
1/2 tsp cayenne pepper
1/2 tsp allspice

4-5 lbs Beef Back Ribs
and your favorite BBQSauce
Directions:
Combine all the ingredients of the rub. (It can be stored in an air tight container for several weeks)
Peel the membrane off the backside of the ribs (as you would with any pork/lamb/beef ribs) and discard it. Season the ribs on both sides.
Set oven for 250F degrees and arrange ribs on cookie sheet with meaty side up. Cook for 2 1/2 hours. Turn over ribs and cook for 1/2 hrs more.
Remove from oven and wrap ribs in heavy aluminum foil sealing it tightly and return to oven for 1 more hour.
Remove from oven and foil, brush with your favorite BBQ sauce and cook at 400f degrees for 15 minutes. Flip and brush again and back into the oven for another 15 minutes.
Serve with warm BBQ sauce.
