Quick Chili

1/2 lb Ground Beef
1/4 Cup chopped onion
15 ounces of kidney beans, drained or 1 1/2 cups cooked dry kidney beans, red beans, or the beans of your choice
14 ounces of diced tomatoes, undrained, no salt added
1 1/2 Tablespoons chili powder (depending on your taste)
Cook ground beef and onion in skillet until beef is browned (160 degrees F). Be sure all the pink color is gone from meat and juices.
Drain any fat.
Stir in beans, tomatoes, and chili powder.
Bring to a boil and reduce the heat to a simmer for 10 minutes. Add a little water if the broth is too thick.
Refrigerate or freeze leftovers within 2 hours of cooking. Use refrigerated leftovers within 4days.

Grilled or Broiled Flat Iron Steaks

Grilled or Broiled Flat Iron Steak
cup of Olive Oil
2 TBLSP Balsamic Vinegar
2 Garlic Cloves, peeled and crushed
1 teaspoon Italian Seasoning

Place steaks in a plastic sealable bag.
In a small glass, wisk together the remaining indredients. Pour over the steaks and marinate for at 1 hour or up to 8 hours
Let the meat set at room temperature for at least one hour prior to cooking
Remove the meat from the marinade and discard marinade
Place the steak on a heated grill or under broiler for about 5 minutes.
Turn the steak over and move to a slightly cooler section and continue cooking about 4 minutes. Be careful not to overcook.
Thinly slice the steak across the grain.
